The previous week when I was really low on food but leftover veggies from Christmas week I made a chili. Not wanting to have any food waste and the fact that my freezer broke down to the point I had thrown everything out in it. The only thing left was root veggies and of course beans in the pantry.
This chili turn out to be a master piece – I’ll have to share the recipe. Not only does it cost pennies a bowl, you can use the week’s leftover veggies to prevent food waste.
The basic and Classic Black Bean and Veggie Chili had to be on the Menu Plan. It yield such a large pot last time and we got 6 meals from it. We are also trying to cut down our expenses from the previous month. Thank goodness Christmas comes once a year Ah?
