This takes me back a few years when I was too small to be at the kitchen counter and had to stand on a chair to do or see anything. Back in those days it was unusual for Dad’s to cook and look after kids. I come from a very traditional European background where it was a not Dad’s job to cook but my Dad was different. He loved to cook “certain” recipes. One of which was “Smashed Portuguese Potatoes.”
Every year before the hot summer approached this was our thing. My Dad and I who has now passed would go out to the market to buy fresh Nugget Potatoes. It became a tradition that I still hold today after 30 years.
When I was notified of the opportunity to share my favourite BC Fresh Nugget Potato recipe with the Food Bloggers of Canada I had to submit my story.
It’s such a simple and healthy recipe but that is not why I love it, I love it because I would smash these tiny nuggets with our fists yelling out “smash!” They were hot so you had to be quick. It sounds a little dangerous but back in those days we didn’t wear seat-belts either. Smashing a hot potato was okay too and still is – if you are quick!
