Welfare Food Challenge – Day 3

This is getting tough!

I had to buy some snacks today due to my low blood sugar. I am starting to crack. I bought a banana, and some peanuts and chocolate from the bulk section for $1.22.

For breakfast I had 2 hard boiled eggs. I also finished the avocado with the lentil burgers for lunch today and I had another orange and apple for a snack.

For dinner this evening I made a casserole with the pasta made last evening, added the remaining cabbage, diced onion, and tomatoes. This will be my lunch and dinner for tomorrow and I plan on oatmeal tomorrow morning.

I will post pictures tomorrow, it looks OK!

I am not sure how I can manage with the rest of my budget for the rest of the week. I needed the snacks today just to keep me going.

I am not sure how I will manage the rest of the week but I am doing my best. I think the problem is that I require a lot of calories and only have $3.88 left in my budget.
