Frugal Dinner Recipe | Black Bean Tacos

Continuing on from last week we are still on our meatless diet and craving Mexican food. Oh no…

A couple weeks ago while out grocery shopping I picked up an Old El Paso Soft taco dinner kit.

Regular price $4.69 on special for $3.69 and used my $1 off coupon.  Total cost of the taco kit $$2.69. But hold on, there is also an in package promotion of TexMex 200g Kraft cheese or up to $6 towards a 380g size Kraft cheese. Correct me if I’m wrong here but I think Kraft is paying me to eat their products. Thanks Kraft foods!

Mexican night is quite common in our home since it’s one of my husbands favorite foods. Occasionally I’ll make the taco shell however today I’m using the soft tacos from Old El Paso but without meat. Naturally the next best and closest thing to substitute ground meat is beans. Once again we pulled out the dried beans again to make BBQ beans with the Old El Paso season mix. The taste won’t be too far away from the real thing.

Black and White Bean Tacos

  • 2 cups of black beans ($0.60)
  • 2 cups of whites beans ($0.60)
  • 1/4 cup BBQ sauce
  • 4 cups of water
  • Old El Paso Soft Taco Kit
  • 100g Grated cheese
  • Lettuce
  • Any of your favorite toppings if desired
  1. Soak beans over night in a large pot or for up to 8 hours. Place beans in slow cooker with 4 cups of water and BBQ. (any variety – whatever BBQ sauce you have in the fridge.) Cook in slow cooker for 4 hours or while out running earns or working. [br]
  2. Cook beans in slow cooker and stir twice. When nearly cooked add the seasoning from the Old El Paso Kit. Mix evenly and let cook until beans are soft and well cooked. [br]
  3. Preheat the oven to 35- degrees and remove package and take out the required number of soft tacos and place on a flat baking dish. Scoop one large spoonful of baked BBQ beans onto soft taco and sprinkle with cheese. Place baking sheet into oven and melt cheese. [br]
  4. In the meantime slice up some lettuce and desired toppings. Open taco sauce pack and place into a small bowl. Ready to assemble tacos once cheese has melted. Add sour cream or plain yogurt if desired. [br]
  5. Once cheese has melted add favorite toppings and wrap taco. Ready to serve! [br]
