Everyone knows who Anna Olsen is? She is one of Canada’s top chefs and with the Food Network has started Anna’s Bake Off – a monthly baking challenge.
For Mother’s Day weekend, we were in Vancouver for a trade show and my mother from Ontario was visiting and during a stop to Granville Island we met Anna Olsen. Here is a photo of Anna and my mother. She was so cool is person and even let us try a florentine!
This month’s challenge was the Earl Grey Chiffon Cake with Maple Meringue. My wife baked this cake and it was a lot of work. She had to acquire pastry flour because all-purpose flour would not of worked (needed to be fluffy).
We love cream and strawberries and although the recipe didn’t ask for strawberries, they are in season and pair well with a generous slice of cake.
Here is a photo of our cake. We wanted to show how this cake is more modern and non-traditional. It has ingredients like Earl Grey tea in a cake that are not common and the frosting was deceiving because it looked like a regular cream frosting but when you took a bite you tasted the maple syrup and the strong Earl Grey flavour.
We made a filling for our cake and used a rich caramel sauce. It added sweetness to the cake.
