With Christmas at the end off the week, having a menu plan is even more crucial than ever to keep me on track of all my tasks. I love the festive season however it comes with a lot of work. Having a menu plan provides you with a stress free tool to manage the what’s for dinner tasks.
Surprisingly, most of my friends that live on Vancouver Island don’t have close family near by. I kick started the week with a Christmas Turkey dinner for friends. My friends here on the island are either from another country or have moved West from other parts of Canada. We generally gather to celebrate Christmas before the day and then head off either on holiday to somewhere warm or some or to go visit family.
For the rest of the week I decided on meals that were quick, easy, and used the majority of the ingredients in my pantry and fridge. Choosing soups to make the meals go further allowing for plenty of leftovers. The only groceries I had to pick up were fresh fruit for snacking making this weeks grocery bill extremely low.
