We all have finished our Thanksgiving dinners and I’m sure we’ve all eaten some pretty delicious turkey sandwiches, but there are so many other ways to use up that leftover bird!
Turkey Leftover ideas:
A great change from the usual chicken stock. Place your turkey carcass with most of the meat removed into a large stock pot. Add a few quartered onions, 5 or 6 carrots cut into pieces, 5 or 6 celery stalks (and leaves too!), and 1 head of garlic split in half. Fill with enough water to cover all the ingredients and bring to a boil. Simmer on low for 4 hours (longer if you’d like a richer flavoured stock). Cool, then strain. Store in the fridge overnight so the fat that rises to the surface solidifies and you can scrape it off. Use as you would any stock.
Use your favourite chili recipe and just sub out the ground beef. You’ll want to saute the turkey just before you add the liquid (tomatoes, water etc).
Brush a pre-made pizza crust (or one you made yourself!) with 1 Tablespoon olive oil mixed with 1 finely minced clove of garlic. Top with thin slices of turkey breast and halved cherry tomatoes. Sprinkle with smoked cheddar cheese and place in a 425F oven just until cheese melts. Top with 2 or 3 leaves of sage cut into thin ribbons.
Waldorf Turkey Wraps
Fill a large flour (white or whole wheat) tortilla with shredded turkey, a few halved red grapes, 1/2 stalk of celery sliced thinly, 1/4 apple cut into small cubes, 2 large pieces of Boston bib lettuce, a squeeze of lemon juice and a bit of mayo. For a true Waldorf, add some chopped walnuts- optional, of course.

Turkey Shepherd’s Pie
This is great way to use up your leftover turkey, mashed potatoes AND veggies left from Thanksgiving dinner. Saute onions in oil just until translucent. Add shredded turkey, veggies (corn, peas, carrots etc), 2 cloves minced garlic, salt and pepper and a tablespoon of flour. Cook 2 minutes then add chicken stock. Transfer to baking dish and top with mashed potatoes. Cook in 375F oven until potatoes are golden. (for full recipe and measurements- http://cheapassmama.weebly.
