Sweet Potato Gnocchi Recipe with Butter Sage
Gnocchi dates back to Roman times and is a traditional Italian pasta. They are many variations of gnocchi however all are made from similar ingredients, flour, egg, and potato. Since this occasion is to celebrate Thanksgiving I decide to use Sweet Potato. I also added spinach.
Kids loves gnocchi and who wouldn’t with the potato and flour base dressed with your favorite toppings! I must admit it’s taken me a while to prefect the pasta and on occasion like this time it was still to sticky. The dough must be dry and my spinach was still wet. It’s best to drain the water from the spinach as much as possible otherwise you’ll end up like sticky pasta like I did. Nonetheless just add flour to help you roll and cup up the pasta.

|Sweet Potato Gnocchi with Butter Sage sauce

Serves: 8-10 (as a side)
- 2 lbs of sweet potatoes or yams
- 1.5 lbs of spinach (fresh or frozen)
- 2 eggs
- 1/4 cup butter
- 1.75 cups of flour extra for dusting
- 2/3 cup of Parmesan cheese freshly grated (optional)
- Cook spinach, in just water for 5 minutes until soft and moist then drain trying to remove as much water as possible and chop up.
- Cook sweet potatoes or yams in lightly salted water boil for approximately 25 minutes until cooked and soft and tender. Mash while still warm.
- Combine the sweet potatoes or yams with the spinach and flour.
- Beat in eggs and add a little salt to taste. Knead the dough for a 3 minutes.
- In the meantime boil a large pan of salted water. While you wait for the water to boil prepare the gnocchi by shaping the dough into several balls. Rolling the balls of dough into 3/4 inch lengths and cut lengths about 3/4 inches to form gnocchi. Dust lightly with flour. - Place the gnocchi into the boiling water and boil gnocchi a few at a time. Drain and remove once gnocchi rises to the to of the boiling water. Once you’ve cooked the whole batch place on a dish.
