Coconut Tart with Chocolate Smear
Out comes the coconut for the second time today. First in my pancakes and now the major ingredient in my delicious coconut tart. There is nothing that tastes as heavenly as blackberries covered in semisweet chocolate on a coconut cookie base. I add Natural Madagascar Bourbon Pure Vanilla Extract from “The Vanilla Food Company” and their Callebaut – Semisweet Chocolate Callets from Belgium. Although I don’t generally recommend such a divine treat in the middle of the afternoon over a nice cup of cappuccino, I can honestly say this was savored graciously bite by bite. Also worth mentioning, it took me approx. 20 min to make!
Roasted Butternut Chowder with Apples and Bacon (I used Chorizo)
From what I gather all across the country, it’s been somewhat cold, even in Victoria we’ve had a much cooler day today, which makes it perfect for this delicious warming butternut chowder. I didn’t have any bacon in the fridge but I did have my mum’s home made smoked chorizo, which is what I used that add the perfect hot smokey taste to this creamy chowder. It makes such a big difference to roast the veggies as suggested in the recipe making it much more rich and a classic chowder. Once more the major work here is peeling the squash! Not such a bad alternative for a yummy soup!!
