According to the Canadian Celiac Association “Celiac disease is a medical condition in which the absorptive surface of the small intestine is damaged by a substance called gluten. This results in an inability of the body to absorb nutrients such as protein, fat, carbohydrates, vitamins and minerals, which are necessary for good health.”
It is also estimated that 1 in 133 Canadians have Celiac disease. To me that is a heck of a lot of people effected. It is much more challenging for people that suffer from Celica disease to make and bake food. The ingredients can be harder to find and often more costly. Last month in May we celebrated Celiac Disease. I thought it was a great follow up to provide our readers some further information and tools to help anyone that might be affected.
Do you know of anyone that suffers from Celiac Disease? If so, please pass this book along. I’ve tried it to see if the recipes stacked up to the originals and classics, I think you will be surprised to that the cookbook does offer some great tasting recipes. The cookbook is written by a mother and daughter Vanessa and Mary Hudson, whose family first encountered the need to eat gluten free because of Celiac diagnosis throwing the family’s eating habits into chaos.
