Shark fin soup is a popular soup item of Chinese cuisine usually served at special occasions such as weddings and banquets, or as a luxury item in Chinese culture.
In shark fin soup, the fins themselves are virtually tasteless. The taste comes from the soup, while the fins are valued for their texture. In Asian cuisine texture is prized as much as taste.
The California Senate passed legislation Tuesday, September 6, 2011, that would ban the trade, sale and possession of shark fins.
If Gov. Jerry Brown signs the measure, California will be the fourth state in the U.S. to ban shark fin imports. Hawaii, Oregon and Washington already have done so.
These bowls of soup can sell for up to $100 per bowl. While the U.S. only consumes a small portion of the world’s shark fins, California boasts two of the largest Asian food markets out of Asia and consumes far more shark products than other states.
